Gluten Free Lunchbox

Before going gluten free my daughter had sandwiches every day for lunch. I struggled for weeks to figure out what to pack that she would actually eat. One day I saw a suggestion for Corn Tortilla Wraps, with cream cheese and lunch meat. Well, she loved it immediately and began to take this every day for lunch. She had to give up dairy around Thanksgiving so now she has the plain dry wrap with lunch meat – I’ve tried to convince her to have mustard or something on it, but this is how she likes it. We also throw in her favorite chips – Tostito’s or Safeway Organice White Corn Tortilla Chips. I know – it’s pretty dry and bland but she likes it and she eats it! If you want to try this be sure to check all the labels to ensure there is no wheat/gluten ingredients.

Other ideas:
Celery with organic peanut butter, baby carrots, clementines, apples, Fruit-A-Bu smooshed fruit or Nana’s brand gluten free, dairy free chocolate chip cookies.

Corn tortilla wraps are a great idea. I also buy Brown Rice Tortillas occasionally too. I have been making pestos to go on my wraps lately- almonds are a good sub for the cheese. Anyway, thanks for the lunch and snack ideas! :)

Here is a link to a recipe that has gotten rave reviews! it is for Gf wrap bread – sort of like a pita bread that you can actually roll! I have not made it yet but I want to. I hear it is great for sandwiches.
